Paarl boutique wine producer Druk my Niet, nestled in the foothills of the Hawequa Mountains near Bain’s Kloof Pass, celebrated the opening of its new maturation cellar on Friday. The 24ha estate, which is located in a biosphere reserve, has 11ha under vines, all red varietals, with the balance of the farm given over to preservation of the natural fynbos in the area. “We mature our wines for two years in barrel, and two year s in bottle, so we need the additional space this new facility affords us,” said winemaker and viticulturist, Alex McFarlane at the ceremony.
